Fruit Trifle..


My husband loves trifles so I made him this earlier this week. It took me a few days to make as we ate all the trifle sponges I made and I had to make some more again the next day!!


Ingredients:
  • 1 Strawberry flavour jelly tablet (that make 1 pint of jelly).
  • 2 Medium eggs
  • 75g Caster sugar
  • 75g Self raising flour
  • 1 Teaspoon vanilla extracts
  • 4-5 Tablesoons strawbery conserve
  • Sprinkle of caster sugar
  • 1 Oranges
  • 500g Ready made fresh custard
  • 300g Double cream
  • 125g Blueberries


Method:
  1. Make up 1 pint of strawberry jelly in a bowl, then night before or with plenty of time to leave to set. Leave in fridge until needed.
  2. Make the trifle sponges up the night before too or a few hours before you need them. Pre-heat the oven to 200c fan.
  3. Grease and line a swiss roll tin.
  4. In a bowl whisk eggs, caster sugar, self raising flour and vanilla extracts together until thick and creamy.
  5. Pop the mixture into greased swiss roll tin and move the tin around to make the mixture even.
  6. Bake for around 8-10 minutes.Until nice and light brown.
  7. Place some grease proof paper out and sprinkle the caster sugar on it. 
  8. Take your cake from the oven and transfer upside down from tin onto the sugar paper.
  9. Remove the grease proof paper.
  10. Spread around 4-5 tablespoons of strawberry conserve all over the cake.
  11. Roll the cake longways, until all cake is rolled up and you have a long swiss roll style base.
  12. Cut whilst warm into 12 slices.
  13. Leave to cool.

Making the trifle up:
  1. Arrange the swiss roll trifle sponges around the bottom and up the sides of a big glass dish.
  2. Peel the orange and cut down the segments to make little orange cubes.
  3. Take the jelly from the fridge and mix up with a spoon. Tip on top of the sponge and orange.
  4. Spoon the custard on top.
  5. Pour the double cream into a bowl and whisk with an electric mixers until thickly whipped.
  6. Pop on top of the trifle.
  7. Wash and arrange the blueberries on top.

Children Spring Cocktails..


Hi, how has your week been? Are you ready for the weekend? I know I am.

Last week I was making some fun alcoholic cocktails recipes up and I surprised the children by making these alcohol-free fruit punch cocktail ones up for them. 

They tasted so yummy, we ended up having the same ones a few days in a row!!

Home Made Trifle Sponges..


I made these trifle sponges yesterday ready for a trifle I was making today. I like to buy shop bought ones when I am in a hurry and make my own when I have more time. We love trifles, so it is good to mix them up a bit. I mostly make them up around Christmas, R=Easter and birthdays. Just like my Grandma use too. Passing on a family tradition.


Trouble is they were so yummy, me and the children ended up eating most of them. I now have to make them up again! Ha!! No worries, they are quick and easy to make.

Easter Chocolate Nest Cake..

Pre heat the oven to 180C gas mark 4

Bake for 50 - 55 minutes in 2 separate 6” baking tins

Spicy Seafood Paella...


One of our favourite meals has to be paella. Even the children all love this too. My husband set us off loving this, as he used to go away to Spain a lot when he was younger. I never went abroad until I was mid 20's but once I went and tried it, I loved it too.

We like it served with lots of different seafood in ours, instead of chicken.


I usually buy 2 king prawn seafood mixes but the husband fancied having more mussels in this time.

Granola Parfaits With Strawberries And Blueberries...


I love breakfast (the most important meal of the day)  and one of my favourite things to make is granola and fruit parfaits. Layering up fruit, cereal and yoghurt, what is not to love? 

I love breakfast so much, most day I have 2 breakfasts. One before I walk Mollie The Collie and once after walkies!!

A glass Mason jar with Granola, Greek Yogurt, Blueberries and Strawberries make such a tasty and yummy breakfast, brunch or afternoon snack. Delicious! 

Sometimes I like to make them up, put the lid on them and have them when I have come back in from a run when the yogurt has soaked into the granola. Quicker to eat then too.


I love to make my healthier homemade granola recipe up but as soon as I make it, we eat it all up. So today's recipe is with some shop brought granola with strawberry pieces. You can adjust this recipe to what you have in at the time too.

Vintage Inspired Tablescapes...


Throughout February and the month of love, this was my vintage inspired tablescape.

I love to dress my table up and take pictures, do you?

It makes's it look pretty and inviting for dinner.

I was planning Valentine's day table setting and I had some beautiful flowers I got as a Valentine's day gift and they matched one of my dinner sets perfectly.

Pink, red and yellow roses went perfectly with my Johnson Brothers Eternal Beau collection. I love dinner set and have had it years and years. It could even be vintage now.

You can pick up bits and bobs from this collection at car boot sales and charity shops as the shops don't sell many of these sets now.

It was really popular, back in the day so if I have needed anything adding to my collection, I ask my Mum or Mother in law to keep an eye out for it. Perfect if I break something too.

I am now planning a nice Spring table makeover now.

Maybe with an Easter theme!?

I do have a sweet tablecloth with little bumble bees and ladybirds on it too, so maybe something along these lines. The trouble is when you have a loud pattern on your table cloth, you need a plain dinner set so not to make you table crowded. Lucky I have my pale green set then.

Anyway, back to my vintage inspired tablescape:


I planned my table around a beautiful bunch of coloured roses my husband brought me. This dinner set matched them lovely as they already have pink flowers on them.

Hot Chocolate Treat..


After today's 5 KM Parkrun race we had a little treat for doing well. We love to run Parkrun and all ran our best. 

After we went home for a nice shower and a yummy cooked breakfast. 

Later on, we went shopping in Chesterfield and a visit Grandma. We all stopped off at their favourite pub and we all had yummy hot chocolate and creamy for a special treat.

Laetitia’s Lovely Plum Crumble Cake.

How delicious!?


This delicious creation can be served hot as a pudding, or cold as a cake.

It’s made with a mixture of rolled oats, wholemeal self-raising flour, melted butter and muscovado sugar, layered with South African Laetitia plums.

The layers are repeated so that there’s a lovely colourful topping of fruit. It’s divine served with crème fraiche, cream, ice cream or thick Greek yogurt.

The Bunny Bum..


Today I am sharing some fun news with all you keen bakers out there: 

Dr. Oetker and baking expert Juliet Sear, created entirely edible seven foot tall Bunny Bum that took over 110 hours to create using more than 3,000 bars of Dr. Oetker Fine Cooks’ Chocolate.

How cool is this cake!?

The giant Bunny Bum has popped up in London Potters-field today. If you are around the area today it will be a must see. I wish I could pop down and see it but it is too far away.


The Bunny Bum is at London Potters Field today and hoping to Manchester Piccadilly on Friday!

If you are around any of the areas on these days look out for it. I am sure you will not miss this giant bunny bum if you are :)

This easy tart gives you two bites of the apple, by using a combination of South African Granny Smith and Golden Delicious varieties.


Using a circle of puff pastry, the apples are arranged haphazardly on top of a wonderful mixture of ground almonds, butter, sugar and egg for a sensational treat.

Spinach Smoothie..


Hi, how are you today? Me, I have felt so much better!!

I am glad to see the back flu once and for all!! Nothing worse than being ill. Especially when you're a mum and the children depend on you to make their food and clean their clothes. 

I keep trying to be healthier and get lots of fruit into my diet to try and get my strength back up. Trying hard to get my five a day into my food diet. 

Two smoothies a day, every day last week to get some vitamins inside me quickly. I really hope it is working. It sometimes takes you ages to feel yourself again. I hate being poorly. Getting your strength back can also take time too.

I mostly had blueberries in every smoothie last week and they always have a banana in them!! So yummy and tasty. The great thing about having bananas in them is that it makes the smoothies nice and thick too. We love thicker smoothies rather than the thin ones.

A few days ago I just picked up a pack of spinach so I had a nice change. It was delicious!!

How lucky am I?

They look stunning.


The roses were stunning and such sweet colours not forgetting they smelt lovely too. So exciting being brought presents, especially flowers and roses are my all time favourites.
