Spinach, Avocado, Coconut Oil & Raspberry Smoothie
Serves: 2 people

- 100g Kale leaves, trimmed of any tough stalks
- 2 tbsp coconut oil, softened
- 200g fresh or frozen raspberries
- 1 ripe avocado, peeled and stoned
- 400ml unsweetened soy milk (or cow’s milk)
- Juice of 1 lime
- 2 tbsp honey
- 12 ice cubes
- Place all the ingredients into a smoothie maker or liquidiser and blend until smooth.
- Divide between 2 tumblers and serve at once.
