Spinach, Avocado, Coconut Oil & Raspberry Smoothie

Serves: 2 people

Prep time: 5 minutes

  • Vegetarian


Ingredients:
  • 100g Kale leaves, trimmed of any tough stalks
  • 2 tbsp coconut oil, softened
  • 200g fresh or frozen raspberries
  • 1 ripe avocado, peeled and stoned
  • 400ml unsweetened soy milk (or cow’s milk)
  • Juice of 1 lime
  • 2 tbsp honey
  • 12 ice cubes


Method:
  1. Place all the ingredients into a smoothie maker or liquidiser and blend until smooth.
  2. Divide between 2 tumblers and serve at once.
