How To Ice Christmas Holiday Cookies With Biscuiteers...


You may remember this post I published last week; The Snowman™ And The Snowdog Biscuit Tin Review?

Well today, thanks to the Biscuiteers, I have their very own recipe to share with you! So you can have a go at making your own Snowman biscuits for Christmas. How cool.

How To Ice Christmas Holiday Cookies With Biscuiteers:


Makes 24 biscuits

Ingredients for biscuits:
  • 200g Plain flour
  • ½ teaspoon baking powder
  • ½ ground ginger
  • ½ cinnamon
  • ½ mixed spice
  • 50g dark brown sugar
  • 100g salted butter, diced
  • 50g black treacle or molasses

Method:
  1. Preheat the oven to 170°C/350°F/gas mark 4 before you begin making your biscuits.
  2. Sift the flour, baking powder and all the spices into a mixing bowl. Add the sugar and mix well.
  3. Add the butter. Using just the tips of your fingers, rub together the ingredients until the mixture resembles fine breadcrumbs.
  4. When all the butter is evenly mixed in, make a well in the centre and add the treacle and bring it all together. You will know when it is all mixed in as it will have an even colour all over with not too many streaks of treacle.
  5. You will need a collection of Christmas cutters, or you can print off a template from online and carefully cut the dough with a sharp knife.
  6. Place the dough onto your clean worktop. Divide into two and squash the dough into two even-sized flat discs. Cover and chill until ready to use, or roll out immediately.
  7. Cut your biscuits using biscuit cutters into your desired shape and evenly place onto baking trays (make sure these are lined).
  8. Bake for 14-18 minutes, depending on your oven.
  9. When the biscuits are evenly cooked and just beginning to turn a golden colour, remove the trays from the oven and transfer the whole sheet of biscuits to a cooling rack.
  10. Leave to totally cool before storing or icing as the icing will melt.

Then make up a batch of some of our flood and line icing. You'll need red, black, white, cream, green, blue and orange line icing and white, red, cream and black flood icing for the below designs.

How to ice snowman biscuits:
  • Use your white line icing to outline the body of the snowman, and a black line icing to outline the snowman's hat. Leave to dry for 5 minutes.
  • Use white flood icing to flood the snowman's body and black flood icing to flood the snowman's hat.
  • Place your snowman biscuit onto a baking tray and into an oven set to the lowest temperature (50°C/gas mark ¼) for 40 minutes, or until the icing has set hard.
  • Once your flood base is set dry, use your black line icing to pipe a curved row of dots for the mouth and two dots for the eyes.
  • Use orange line icing to pipe the snowman's nose and green icing to pipe a band on the snowman's hat.
  • In a back and forth motion, pipe the snowman's scarf with red line icing. Leave to dry for 5 mins. Once dry use white line icing to pipe small lines of detail on the scarf. and green line icing to pipe tassels at the end of the scarf. Leave to full dry.
