Olympics Recipes ...

Princes have created some Brazilian recipes to tie in with the Olympics and kindly let me share them!!

How nice.

Princes Peach and Orange Smoothie:

This smoothie, made with pure fruit juice, is the perfect refreshing drink. Substitute pure orange juice with another flavour for a twist.

Serves: 2

  • 1 can Princes Peach slices in juice
  • 1 glass Princes pure orange juice

How to make it:
  1. Drain peaches, reserving the liquid.
  2. Add to a blender with the orange juice and blitz until smooth.
  3.  If the mixture is too thick to pour, add a little of the reserved juice and blend until the desired consistency.
Princes Hot Dogs with Brazilian Chilli Bean Salsa:

Serves: 4

Preparation: Approx 20 minutes

  • 4 Princes Jumbo Hot Dogs
  • 4 finger rolls, sliced in half
  • 1 tbsp sunflower oil
  • 1 red onion, sliced into rings
  • 1 red pepper, deseeded and sliced
  • 125g, drained and rinsed cannellini beans
  • 1 tbsp olive oil
  • 2 tsp lemon juice
  • 2 spring onions, finely chopped
  • 1 small green chilli, deseeded and chopped
  • 1 clove garlic, crushed
  • 2 tbsp fresh coriander, chopped
  • 4 cherry plum tomatoes, diced

How to make it:
  1. Heat the sunflower oil in a medium frying pan, add the sliced onion and pepper, fry over a medium heat for five minutes until the peppers are softened and browned.
  2. Add the Hot Dogs to the frying pan and cook on a medium heat for a further five minutes.
  3. Make the Chilli Bean Salsa by roughly mashing the beans with a fork in a medium bowl. Stir in the olive oil, lemon juice, chilli and garlic until thoroughly combined. Gently stir in the chopped coriander, spring onions and diced tomatoes.
  4. To serve, place the Hot Dog in the roll, top with the fried onions and peppers. Generously spoon on the Chilli Bean Salsa and top it off with potato sticks and Jalapeno sliced peppers.

Brazilian Mackerel with Wild Rice and Pineapple:

Serves: 2

Preparation: Approx 5 minutes
Cooking time: Approx 5 minutes

  • 120g fresh prepared pineapple, cut into pieces
  • 2 x 250g packs microwavable long grain & wild rice
  • 2 tbsp finely chopped red onion
  • 1 tbsp chopped fresh chives
  • 2 x125g cans Princes Brazilian Mackerel Fillets
  • Salt and freshly ground black pepper
  • Squeeze of lemon juice

How to make it:
  1. Heat a chargrill pan or grill. Chargrill or grill the pineapple pieces for 1-2 minutes on each side.
  2. Meanwhile, prepare the microwavable rice according to pack instructions, then add the red onion and chives and stir them through. Share between 2 serving plates.
  3. Break the Brazilian Mackerel Fillets into chunks and serve on top of the rice, with the sauce spooned over. Serve with the pineapple.

Mackerel Piri Piri Couscous Salad:

Serves: 4

Preparation: Approx 15 minutes

  • 190g can Princes Piri Piri Mackerel Fillets
  • 150g couscous
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 small red onion, finely chopped
  • 1 yellow or red pepper, deseeded and chopped
  • 8 radishes, chopped
  • 2 tomatoes, chopped
  • ¼ cucumber, chopped
  • Salt and freshly ground black pepper

How to make it:
  1. Put the Princes Piri Piri Mackerel Fillets onto a plate and share into 4 equal portions.
  2. Put the couscous into a heatproof bowl and pour over enough boiling water to cover it by 2cm. Stir, then leave to soak and swell for 10 minutes.
  3. Meanwhile, mix together the lemon juice and olive oil in a large bowl and add the red onion, stirring to coat.
  4. Fluff up the couscous with a fork and add it to the red onion with the pepper, radishes, tomatoes and cucumber. Season with a little salt and pepper and stir well.
  5. Share the couscous between 4 serving plates and serve, topped with the mackerel fillets.
