My Everyday Smoothie...

Happy Saturday. Love smoothies for breakfast?

I do.

After my morning run, I like to make myself a nice and tasty smoothie. I love making smoothies after a hard workout or run. Replaces some of the lost energy.

At the minute I love adding low-fat natural yogurt into my breakfast treat. It makes them taste creamier and without being fatty.

I almost always add banana and peanut butter to my smoothies.

Perfect handmade gifts.

Makes 12 large stars or 30-40 smaller ones.

These stars, packed in crinkly cellophane, tied with some ribbon or raffia and given a pretty label, have got the whole ‘jingle bell rocks’ thing going on.

They take a little time to make, as you need to rest the dough at a couple of stages, but you can use this time to deck the hall with boughs of holly.

And you don’t need to stick to star shapes – anything Christmassy or even little hearts will go down well.

Pulled Turkey, Sweet And Sour Maple Sauce...

Pulled Turkey, Sweet And Sour Maple Sauce on nutty bread, anyone?

How To Make Pulled Turkey, Sweet And Sour Maple Sauce:

Serves 4

  • 500g cooked turkey meat (drumsticks and breast) 
  • 60g button mushrooms 
  • 1 onion, sliced thin 
  • 45ml sunflower or olive oil 
  • 5 tsp crushed black pepper 
  • 45ml sherry or wine vinegar 
  • 45ml pure maple syrup from Canada 
  • 175ml gravy or thick chicken stock 
  • 45ml cranberry juice
  • 8 slices rustic bread, thinly sliced and toasted 
  • Salt and pepper, to taste

How To Make:
  1. Pull turkey pieces apart. Heat sherry vinegar, maple syrup and pepper together until reduced by three quarters. 
  2. In a different pan, add oil and sauté onions with mushrooms for 2-3 minutes. 
  3. Mix gravy with the vinegar reduction, add onions and mushrooms, then pulled turkey.
  4.  Adjust seasoning. Add cranberry juice to loosen the mixture.  
  5. Place a slice of bread on each plate. Place pulled turkey on top of each slice of bread. 
  6. Cover with the second slice of bread.
  7. the cranberry juice can be omitted if the consistency is fine as is.
