I love to find new recipes to try out but I never have the full ingredients in. Then when I do get to the supermarkets, you can guarantee I have lost or forgotten my list. Grrr!!!!

So we usually stick to the old favourite meals, but even these can get boring every week.

This week HelloFresh came to the rescue and sent us one of their classic recipe boxes to review. We got sent a classic 3 meals for 4 people package to try. How nice!? I have never had a recipe box before so I was interested in giving them a taste test.

Watercress & Elderflower Martin...

Feast Like a King this Christmas with Watercress. Think of Christmas foods and watercress may not immediately spring to mind. But this wasn’t always the case - in medieval royal courts, watercress was a key element in a big feast, used like bread to mop up the gravy.

It was also believed to cleanse the palate so had a double purpose at a banquet, with its hot peppery flavour preparing the taste buds for the next rich onslaught.

We may use watercress in a slightly more sophisticated manner these days but nevertheless, it’s still valued for its fresh peppery kick and the subtle seasoning it provides. Taking a leaf or two from our forebears, we’ve prepared a Christmas feast fit for a king, with rich, indulgent flavours all offset by the clean bite of watercress.

So, go ahead – eat, drink and be merry, after all, one message that has successfully passed down the centuries is: "At Christmas play and make good cheer for Christmas comes but once a year."*

It’s hot work all that cooking so refresh yourself with this rather tasty tipple – you deserve it!

Watercress & Elderflower Martin:

Serves 1

Prep time: 5 minutes

  • 4 lime wedges
  • 10ml Belvoir Organic Elderflower Cordial
  • 40ml Tanqueray gin
  • 15ml Martini and Rossi Extra Dry Vermouth
  • Fresh watercress leaves as garnish


1. Muddle the watercress and lime with the elderflower cordial to release the flavour and colour of the watercress.

2. Add some ice and the remaining ingredients. Shake vigorously and strain into a chilled martini glass, then garnish with fresh watercress leaves. Serve immediately.

Scrambled Eggs, Avocado and Parmigiano Reggiano Bagels...

I have just joined back up at the gym and once again I am trying to get back into a healthier routine. After Chrismas, I plan to go regularly to improve my fitness and I need to start improving my diet too.

When I get to the gym I always work hard. Sometimes it is the getting to the gym that is the hard part!! Rain, snow, or apathy often keeps me away though. If  I do make it I like to eat healthy on my return home. I know how hard it was to burn off the calories!! So I don't like wasting all that effort...

When I get home from the gym I crave healthy food. My eldest Son always tells me to make sure I have a balance of Protein Carbs and Fats.

I always make eggs for some reason and 9 out of 10 times it is scrambled egg.

Today I am sharing one of my favourites after gym workout snacks. This gives me the right amount of carbs protein and fats back into my system. Thanks Son!!

I love the weekend. The first day of the week I get a chance to sleep in. I have time to chill and forget about the stresses and strains of the working week. Also, I get to spend it with my lovely children as they are not at school.

On a Saturday myself and the children like to spend quality time together. After a week of dark mornings, being at school, then dark evenings usually there is not much time to go anywhere. So we make up for it at the weekend.

The Snowman™ And The Snowdog Biscuit Tin Review...

I have always been a big fan of Christmas. Always have, always will be. When I was growing up my Mum & Dad made Christmas a very special time. Me and my Husband have passed the magic of Christmas down to our Children.

I was the only child, so growing up and I woke up on Christmas morning, the floor was covered in presents just for me!! It would take me forever to open them all.

I remember when I first started noticing how special Christmas was, coinciding with the release of  The Snowman film. All those years ago. I love this film and still find it adorable today.

Watching The Snowman and The Snowman and The Snowdogs films on Christmas Eve with the children give Christmas that extra bit of magic. Once the Children have watched it, off they go to bed and excitedly try to get to sleep. Hoping they have been good this year and they will get lots of presents on Christmas Day.

Filo Pastry Tartlets with Cheese-Flavoured Coarsely Ground Semolina and Parma Ham...

With Christmas around the corner, festive celebrations are happening all around. This recipe full of flavour and colour will make your life easier during the busiest time of the year. Topped with sweet and silky slices of Parma Ham, these tartlets are the perfect starter.

Filo Pastry Tartlets with Cheese-Flavoured Coarsely Ground Semolina and Parma Ham:

  • 150g filo pastry
  • 250g milk
  • 1 egg yolk
  • 60g coarsely ground semolina
  • 100g Ricotta cheese
  • 40g grated Parmesan cheese
  • 100g sliced Parma Ham
  • 1 knob of butter
  • Salt
  • Black pepper

  1. Start by cutting the filo pastry into squares of the mould size (ideally 6-7 cm), brush them with melted butter and arrange 2-3 squares at a time in the moulds.
  2. To prepare the filling, heat up the milk with some corns of black pepper and filter. Put on the heat again, bring back to a boil and add the semolina gradually. Cook whilst stirring until the mixture is nice and firm. Then, take the mixture away from the heat and add the butter.
  3. Lightly beat the egg yolk, then add it to the semolina mixing well. Finally, add the ricotta cheese and grated Parmesan to the mixture.
  4. Top the tartlets with the cheese cream and bake in the oven at 180°C for 15 to 20 minutes.
  5. Garnish the tartlets with slices of Parma Ham.

Ultimate Christmas Tree Prosciutto di Parma Cheeseboard...

Happy Friday. Hope you are having a lovely week so far? Except for the cold!!

Pinch Punch it's the 1st of the month.

The Christmas Day countdown is officially on! 24 more sleeps. Eek, I love Christmas.

I am so looking forward to this weekend. I have had such a hectic week, I am looking forward to putting my feet up, and letting the kids spoil me. (I live in hope.) Although with another inset day and a Christmas tree to put up there might not be much rest!!

I love eating lots of yummy foods from the 1st December until the 1st January however I really do not want to gain any more weight this year.! So I am doing more preparation food-wise this month.

With just over 3 weeks until Christmas Day, it has me planning Christmas Dinner and all our party foods.

A few months ago I teamed up with Prosciutto di Parma to share some of my favourite recipes of the season.

In summer I shared my favourite quiche recipe using Prosciutto di Parma: Prosciutto di Parma And Asparagus Quiche.

In Autumn I share mine and the children's specials: 4 Quick & Easy Prosciutto di Parma Ham Naan Bread Pizzas.

In Winter and the run-up to Christmas, it is all about the party food and nibbles here.
